Home » Food, Kitchen » Choko Curry

  • 500g potato, parboiled and diced
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, crushed
  • 2 tablespoons of green curry paste
  • 400 g can coconut milk
  • 2 tablespoons tamari or soy sauce
  • 2 chokos, peeled and chopped roughly
  • 1 teaspoon caster/superfine sugar

Edit Steps

Heat the oil in a wok or frying pan over medium heat.
Add the onion and garlic. Saute until gently cooked. Add the potatoes and cook until some of the sides of the potatoes are golden (stir frequently).
Add the curry paste and stir through. Add the coconut milk, chokos, sugar and sauce.
Bring to the boil. Reduce heat and leave to simmer until the choko turns almost tender.
Serve with rice or quinoa. This is a great autumn curry, to make the most of the choko harvest.
